No flour, No Sugar cookies by Carolyn


So this recipe is adapted from Leslie Beck's Nutrition guide to a Healthy Pregnancy.

I have recently started (with stops and starts!) eating a no sugar and no flour diet again. My ultimate quest for healthy looking skin ALL the time. I really do miss sugar so I do try to incorparate sweet into my diet. Mostly by eating 85% chocolate which I used in this recipe.
So here it is.

Beat together 1/2 cup butter (and since I am also eating more vegan, try earth balance) and 1/3 cup Agave nectar.
Add 1 egg, beat in 1/2 tsp of Vanilla.

In a seperate bowl combine 1 1/4 cups of Almond Flour (cookies maybe slightly gritty so if you have a food mill try grinding the almond meal/flour. with 3/4 cups of rolled oats(add slightly more to compensate for the agave nectar) 2/3 cup of ground flax seed and 1 tsp of baking soda (I used baking powder)

Add the flour mixture in 3 separate parts to the butter/sugar mixture. Beat until all combined.

Mix in 3/4 cup of chocolate chips (I break up a bar of 85% chocolate (you could use milk chocolate if you want more sugar but I don't eat milk chocolate) Although the recipe does not call for dried cranberries, I have added those or you could substitute raisins or add all 3!

Bake at 350 degrees for 12 mins. Be careful they may burn slightly (they did for me in my convection oven so I baked for 10 to 11 mins)

They really are healthy and I feel no guilt eating them! They do taste lighter than regular flour cookies!
